Commercial kitchens are notoriously hard on their equipment. Pots, pans, hood filters, and trays collect grease and baked on carbon that makes them perform worse and shortens their lifespan. Ordinarily, kitchen staff must spend hours on labor-intensive washing and scrubbing to prevent this, using plenty of water and cleaning chemicals in the process, or else throw away equipment and replace it rather than clean it. Most commercial kitchen cleaning equipment isn’t up to the job, which is why we invented one that is.

The FOG Tank® is a heated soak tank for commercial kitchens made to handle cleaning and sanitizing work more efficiently. Just scrape away loose food residue, add dirty items into the lifting basket, lower it, and close the lid. The thermostatically controlled tank holds water at a consistent 185° F while the Tiger Carbon-Removal Powder loosens fat, oil, grease, and carbon on its own. It safely cleans aluminum, stainless steel, and any other metal items. When the cycle is done, simply rinse off any softened fragments, no scrubbing required. Everything that comes out is clean, sanitized, and ready for service.

What The FOG Tank® Cleans

One tank handles the many items that are hardest to clean by hand:

  • Pots
  • Pans
  • Vent hood filters
  • Fry baskets
  • Cutting boards
  • Cambro containers
  • Pizza pans and screens
  • Sheet trays
  • Muffin tins
  • Other metal kitchen equipment

Commercial Kitchen Hood Cleaning Equipment Built For The Hardest Job In The Kitchen

Vent hood filters are where kitchens typically lose the most time and water. Usually this means soaking filters overnight in a three-compartment sink, which ties up the sink, drains sink after sink of hot water, and still leaves grease behind that your staff has to spend time scrubbing.

The FOG Tank® acts as a critical component of your commercial kitchen hood cleaning equipment, cleaning hood filters without any scrubbing while freeing up your sink. Filters come out half a pound lighter on average and fully degreased, which keeps your exhaust system working correctly and helps you stay ahead of hood cleaning compliance and the fines that come with failed inspections. That’s hours of labor and gallons of water recovered every week for high volume operations cleaning filters on a nightly schedule.

One System For The Whole Kitchen

For everything that doesn’t go in the FOG Tank®, our heated soak tank for commercial kitchens, there’s GrimeGo®. GrimeGo® is our non-toxic, non-caustic all purpose degreaser that handles floors, mats, oven interiors, and the surfaces outside the tank. Together they cover commercial kitchen cleaning from the cookware to the floor.

Trusted By Commercial Kitchens Nationwide

The FOG Tank® is National Sanitation Foundation (NSF) and Underwriters Laboratories (UL) certified, trusted by thousands of customers across all 50 states. Read testimonials from our customers and reach out to learn more about how we can help your commercial kitchen.

Frequently Asked Questions

How does a commercial heated soak tank clean cookware and kitchen equipment?

A heated soak tank holds water at a steady temperature and combines it with a cleaning agent that dissolves grease and carbon over time. You submerge the items you want cleaned, close the lid, and let the heat and cleaning powder do the work. No scrubbing is needed.

What can you clean in The FOG Tank®?

Pots, pans, vent hood filters, fry baskets, cutting boards, Cambro containers, pizza pans and screens, sheet trays, muffin tins, and most other metal and heavy duty plastic kitchen equipment. The FOG Tank® comes in multiple sizes to fit larger pans and bakery equipment.

Is the Tiger Carbon Removal Powder safe for aluminum and food contact surfaces?

Yes. The Tiger Carbon Removal Powder is non-caustic, non-toxic, fully biodegradable, aluminum safe, and food safe. Items removed from the FOG Tank® come out sanitized and ready for service.

How often do you change the water and powder in The FOG Tank®?

Once per month, fill your FOG Tank® with water to the clearly marked fill line and add Tiger Carbon Removal Powder. The water and powder maintain their cleaning power whether you run the tank occasionally or around the clock, which is what makes it so much more efficient than single-use sink cleaning.

Does a heated soak tank replace a three-compartment sink?

No. Health codes require you to have a three-compartment sink, though you’re not required to use it. The FOG Tank® is designed to do the work of a three-compartment sink far more efficiently, cleaning pots, pans, trays, hood filters, and other metal and heavy-duty plastic cookware and equipment, whether it needs daily warewashing or removing the heavy carbon buildup that is difficult and costly to do by hand. The more you use your tank instead of the sink, the more you can save.

What temperature does the FOG Tank® run at?

The FOG Tank® is thermostatically controlled and maintains water at 185° F, hot enough to clean and sanitize without manual scrubbing.
