The wire construction of fryer baskets creates hundreds of small spaces where grease and cooked-on residue can collect. Fully submerging the baskets allows the solution to work throughout the mesh, including areas that are difficult to reach with a brush.

Sheet Pans & Baking Trays

The FOG Tank® can be used with a variety of materials commonly found in commercial kitchens. Always consider the material, coating and construction of an item before soaking it.

Stainless Steel
Common stainless-steel kitchen equipment such as hood filters, fryer baskets, cookware, racks and other removable components can be cleaned in the FOG Tank®.

Aluminum
Aluminum equipment can also be cleaned in the FOG Tank®, making it suitable for many aluminum sheet pans, baking pans, pizza pans and other commercial kitchen items.

Heavy-Duty Plastics
Compatible heavy-duty plastic items can be soaked as long as they are designed to withstand the FOG Tank’s 185°F operating temperature

What Should Not Go in a FOG Tank®?

While the FOG Tank® can clean a wide range of commercial kitchen equipment, not every item belongs in a heated soak tank.

Dishes & Glassware
Dishes, glasses and other standard tableware should continue to be cleaned in a three-compartment sink or commercial dishwasher.

Coated & Nonstick Items
Use caution with coated cookware and equipment. Lower-quality, damaged or already-lifting nonstick and Teflon coatings may be stripped during soaking.

Items That Cannot Withstand 185°F
The FOG Tank® operates at 185°F. Plastics, trays and other temperature-sensitive items should only be placed in the tank if they are designed to withstand that temperature.

Items That Cannot Be Submerged
Floors, walls, mats, oven interiors and other fixed surfaces don’t belong in the soak tank. These areas require a surface-cleaning product such as GrimeGo®
